Recipe: Enchilada Meat Loaf

In an email from reader Diane in Texas, we have this submission:

“This was amazing. I served with salsa and sour cream. Also I used shredded cheese instead of sliced. I thought maybe you could add it to your recipe section. [My husband] ate half the pan! Super easy.”

So, appearing now on our Recipes Page is Enchilada Meat Loaf. A word of caution, this is not a low-fat recipe. If you’d like to reduce the calorie level, you might use extra lean ground beef or replace half the meat with ground turkey. Another trick would be to punch holes in the bottom of the pie plate as close to the edges as you can and then put that on top of a couple of empty tuna cans inside a baking dish. This will allow the grease to drain out of the pan so the meat and corn muffin mix aren’t swimming in it.
