When I went to a small liberal arts college in the Midwest, we got to know the cafeteria ladies. We saw them at least twice a day, every day, for four years. Breakfast was always sparsely attended. The menu was pretty normal fare, nothing too exciting. The only big, popular meal was when they had steak night.
Since then, college recruiters say the quality of the cafeteria is becoming a more important factor in deciding which school to attend. And the menus have changed quite a bit. According to Sodexo, which provides food service to many schools and colleges, says these are going to be the most popular dishes in cafeteria this school year:
- Grilled Chicken Souvlaki Kabob
- Couscous Chicken Stew
- Orecchiette with Broccoli and Garbanzo Beans
- Fattoush and Sumac (Pita Bread Salad with Tangy Dressing)
- Spanish Tomato Bread with Manchego Cheese
- Edamame and Corn Salad
- Pesto Pasta Bowl
- Wild Mushroom Risotto Balls with Pesto Aioli
Big change from fried frozen fish fillets, french fries and iceberg lettuce salad.
