We’ve been talking about how to cook vegetables. Lots of people say they don’t like many vegetables. But we need to be eating more of them. So, I thought maybe the problem was that many people don’t know how to cook them in interesting, flavorful ways.
Faithful reader Z in Chicago has been kind enough to share with us one of her favorite ways to prepare eggplant. It sounds good to me.
“The way I cook them is similar to the “Roast” method in the article.
Preheat oven to 400F.
Peel an eggplant and cut into 1/2″ slices.
Melt some butter. Add pepper and salt. Squeeze in some lemon.
Brush butter mixture on both sides of eggplant slices.
Bake on cookie sheet for 12 minutes, turning after 6 minutes.
Garnish with parsley.
Grated onion, garlic or basil can be substituted for lemon. Olive oil can be used instead of butter.”
