If you’re not going at least once in a while to your local Farmers’ Market, you should go now. And when you do, you will be amazed at the beautiful colors and enticing smells.
That means it is time for some wonderful vegetable dishes using all that fresh produce. It’s a good time to make a big fruit salad that’s not canned. It’s a good time to make Ratatouille, a French vegetable stew. Consider putting vegetables on the grill next to the steak or burgers.
Corn, tomatoes and zucchini are especially good this time of year. For something you can eat on for a week, how about a pot of corn chowder, using fresh corn. Look for heirloom and homegrown tomatoes which are great in a salad, salsa or garnish. Zucchini is a popular summer squash that is very versatile. Of course, they are good in any vegetable combination, but there’s also Zucchini bread. And for breakfast, you can have a side of sauteed zucchini and tomatoes next to your eggs.
