I’m trying to increase my vegetables and fruits and cut back on the amount of meat in my meals.
This can be served hot or cold. In this hot weather, a cold pasta salad sounds really good.

Too often the fare for those who don’t eat meat is just a collection of side dishes. I’ve also noticed that too many vegetarians are looking for meat replacements like veggie burgers and fake bacon. This is the wrong approach.
I’m not advocating we give up meat all together, just that we eat a little less.
